Full breakfast

I typically eat a light breakfast in the mornings consisting of maybe bacon and a couple of waffles or fruit and a couple of sausages, but every now and again I love a full breakfast. My hubby loves his morning eggs and sausages and I grill everything except the egg and tomatoes.

I even like to grill the toast and sometimes I will grill the frozen Eggo's blueberry waffles, yes and it's good! There's nothing better than the taste of grilling and it's healthier with my George Foreman grill cause the oils drain in a dish and not on my food.

For years, I used to skip breakfast and just eat a lunch and dinner. I never thought anything about it but now I know better. Even a bagel in the morning is better than nothing. It gives me the energy I need to get the day started.

Roasted Tomatoes:

Ingredients:

  • 6 large (about 3 lb.) tomatoes
  • 1/2 tsp. dried basil leaves
  • 1/4 tsp. salt
  • 2 tbsp. vegetable oil
  • 1/4 tsp. dried thyme leaves
  • 1/3 tsp. black pepper

Preheat oven to 425°F. Use tomatoes held at room temperature until fully ripe. Core tomatoes; cut into halves horizontally. Place cut side up on rack in broiler pan; set aside.Combine oil, basil, thyme, salt and pepper in small bowl; brush over cut sides of tomatoes. Place tomatoes cut side down on rack. Bake about 30 minutes or until well browned. Remove skins, if desired. Serve hot, warm or cold. Makes 4 to 6 servings.
