Chocolate Covered Coconut Balls Recipe

I know many of my friends love coconut so this recipe is for you! These would be perfect to serve up at a party and works great as a finger food. It's really easy to make as well and can be made ahead of the same day as your event.

Ingredients:
1 (6 oz.) pkg. chocolate morsels
2 tbsp. butter
1 egg
1 c. powdered sugar
1/2 tsp. vanilla
Dash of salt
1/2 c. flaked coconut
1/2 c. chopped nuts

In medium saucepan melt chocolate and butter on low heat, stirring constantly. Cool to lukewarm. Beat in egg until smooth and glossy. Add sifted powdered sugar, vanilla and salt; mix well. Stir in coconut and nuts. Chill 1 hour. Shape into small balls. Roll in additional coconut. Put on cookie sheet and chill for 3 hours.



Serve up with a cup of coffee or hot chocolate! Optional: insert those colorful toothpicks to plate them up, that would look so cute! Let me know if you make these!
