Potato Zucchini Casserole

I love casseroles especially if potatoes are part of the mix. This one contains zucchini but you can use any vegetable you like or have on hand. The melted cheese brings the dish altogether. It's the best comfort food and makes a perfect side dish for a potluck, holiday table, or on a cold Fall day!
Potato Zucchini Casserole
1/2 stick butter
2 c. sliced zucchini
1/2 c. vidalia onion, coarsely chopped
1/2 c. chopped green onions (for garnish)
2 c. sliced potatoes
1/3 c. Parmesan cheese, grated
1/2 c. Mozzarella cheese, shredded
1/4 c. olive oil

In a baking dish, melt butter. Layer vegetables in this order: zucchini, onion, potatoes, and more zucchini. Sprinkle Parmesan cheese over mixture. Sprinkle olive oil over top. Bake at 375 degrees for 20 minutes. Remove, spread Mozzarella cheese over top. Return to oven and bake 10 more minutes and finally top with green onions. Serves 8. Y-U-M-M-O!
