Healthy Recipe: Broccoli Pie

It's been awhile since I've shared a recipe so here we go and it's a healthy one too! Since I've started "My Journey to a Healthier Me", I'm not just walking, but lifting weights and reading ingredient labels! LOL! This is a recipe from Betty Crocker that I changed just a little bit. :)

I wasn't always a big fan of broccoli and I find I can eat it better if cheese is melted on it with tomatoes so this dish doesn't disappoint. Let's hop to it!


2 cups chopped broccoli
1/3 cup chopped onion
1/3 cup chopped green bell pepper
1 cup shredded cheddar cheese (4 ounces)
1/2 cup Original Bisquick mix
1 cup milk
1/2 tsp. kosher salt
1/4 tsp. lemon pepper
2 eggs
1 cup cherry tomatoes sliced
1/4 cup basil leaves torn

Heat oven to 400ºF. Grease 9-inch pie plate. Heat 1 inch salted water to boiling in medium saucepan. Add broccoli; cover and heat to boiling. Cook about 5 minutes or until almost tender; drain thoroughly.

Stir together cooked broccoli, onion, bell pepper, and cheese in pie plate. Stir remaining ingredients until blended. Pour into pie plate. Top with the tomatoes and basil.

Then, bake 35 to 45 minutes or until golden brown and knife inserted in center comes out clean. Cool for 5 minutes and serve. Top with more basil if you like. Enjoy!
